Healthy Comfort Food, Sweet Potato Curry Soup

In case you haven’t noticed, it’s February and it is cold outside!!!¬†Sometimes a big bowl of something hot and savory is just the thing to boost your spirits on a winter day. For those of you kicking it in flip-flops somewhere warm, I envy you….but I wont deny you ūüôā for this soup can also be enjoyed chilled! Check the video and watch Megan Elizabeth blend up this nutritious and satisfying dish.

You’ll need:
8 cups chopped sweet potato
2 cups of water or coconut water
8 cups chopped fresh kale
1 cup chopped sweet onion
1/2 cup chopped tomatoes
3-6 dates (based on your use of coconut water vs. regular water)
1 to 1&1/2 cups coconut meat
2 tsp curry powder
1/4 to 1/2 tsp sea salt
